Ready to have my own garden!

puerto rico - snorkeling

We were so blessed to be able to go on a snorkeling trip while we were in Puerto Rico.

We went with a charter company called East Island Adventures. They were great. They are very nice, accommodating, funny, and even almost kinda do a comedy bit with their rules and such. Fun people.

On the way out to the island, we were able to just enjoy the sea and the wind while on the sailboat. Loved it. I actually didn't get to take many photos during this trip. I was having too much fun snorkeling!

Love those colors!! A small rainstorm was rolling in; it hit us later that day. BUT it did not affect our fun. The rain was actually very awesome while snorkeling.

So this was the first place we went snorkeling. It was a shallow reef, to get our bearings if we had never snorkeled before.

This was the second place we visited to go snorkeling. This was just out in the middle of the water, which was about 15-20 feet deep here. This reef was amazing! We saw lotsa stuff.

This was also when it started raining, and the wind and tide kept pushing us snorkelers out further than we were supposed to go. There was always a guide on a kayak, though, staying right with us to make sure we were okay. And to urge us to swim the other way. Hah.

At one point in time, I got separated from the group, and needed to go to the bathroom real bad. So I swam myself back to the boat. While I was in the bathroom, it started raining, so I decided to sit and wait it out a few minutes. Meanwhile, the rest of my family is freaking out because they can't find me and they thought I had drowned. Whoops!

The rain lasted probably only about 15 minutes, and so we enjoyed more time just swimming around, snorkeling, and doing fun jumps and flips off the boat.

Mark did the fanciest dives and flips, showing off for the 10-year-old boys also on the boat. But my dad made the biggest splashes. He's good at that. I heard a little kid say, "Woah, did you see that grandpa make that HUGE splash?!" Haha. Grandpa. He DOES have really white hair.

And there's my lovely family! From left to right, you have Elise (niece), Stacey (big sis), Reggie (bro-in-law), Carley (little sis), me, Mark (the hubs), Carrie (my mom), Melanie (sis-in-law), Bri (niece), and Corey (bro). Only people not pictured was my dad (taking the photo) and my nephew, Trey, who did not come with us on this trip (too young).

I totally recommend snorkeling with this company, East Island Adventures, if you're ever in Puerto Rico. So worth it.

thai peanut butter and jelly sandwich

I've been craving peanut butter and jelly a lot lately. Which I haven't had in forever. The other day, I kind of craved it, but I wanted something different. Well, I love Thai food.....why not make it into a sandwich?

So I did it. And I LOVE it! This is such a weird-sounding, but GOOD combination. I promise.

Thai Peanut Butter and Jelly Sandwich (makes 2 sandwiches)

for the peanut butter mix:
1/2 cup natural peanut butter

1 tbsp honey (maple syrup or agave nectar for vegan)

2 tbsp coconut milk

1/2 tbsp sriracha sauce/hot sauce (or to taste)

juice of 1/2 lime

pinch dried ginger

pinch garlic powder

pinch red pepper flakes (optional

for the sandwich:

4 slices of bread (I use Ezekiel Bread)

1 large carrot, shredded

2 tbsp red onion, chopped

1 handful fresh basil, chopped

1 dollop of orange marmalade (or other jelly)

1. Heat up peanut butter for a few seconds in the microwave in a small bowl. Just a little - we want the peanut butter to be able to mix well, but not blistering hot.

2. Combine all other ingredients for the peanut butter mix into the bowl. Blend well.

3. Spread on two slices of bread.

4. Sprinkle shredded carrot, chopped red onion, and chopped basil.

5. On the two other slices of bread, spread the marmalade.

6. Slap the slices of bread together, cut on the diagonal, and serve.

I don't know about you guys, but I've been jumping over there every day to see what's going on during their giveaways!!

I love this blog. Grow Soul Beautiful is all about healthy living in SO MANY aspects of the term besides just boring ol' exercise and eating healthy! ;) Although that stuff IS important, and they do have that on their blog as well, I love that they are all about inner beauty and loving yourself, as so many of us women forget to do.

recent blog design work

Okay, guys. I designed another blog! It's a completely new blog and I'm excited to tell you about it because....

IT'S MY MOM'S BLOG!!!!

It's called My Two and a Half Cents. Rightly named for the times she likes to put her "two cents" in, but always goes that  half-cent over. She has her first post up right now, about the Endeavor - how it should've stayed in Houston, and about it's last flight. She's pretty funny.

So you gotta check it out! She's pretty cool, that mom of mine. :)

Anyway, she didn't want to get a blog set up until it was all pretty and such. So I designed it for her. Here's the design:

Do ya like it? She gave me what she wanted as her color scheme: sunset pink and orange, with Caribbean blues, and told me to get to work! I love the way the colors turned out, and I think they fit perfectly together, and fit my mom perfectly as well. :)

my instaweek #22

I haven't posted one of these in a while. So these instagrams are from the last month. I also haven't been doing much with instagram lately. I've been so busy!!

My photography business and design work have been keeping me busy and I love it! Also, we've been looking for a house to rent. In Austin. Yes, we're moving to Austin. :)

Looking for a house to rent is hard stuff. Especially when you have a huge dog.

1. Cleaning out my old closet in my parent's house...and I found this beauty!! I totally forgot I had this. And now I am so excited for cooler weather so I can wear it! Best sweatshirt ever.

5. What I get when I have to go to Starbucks. Haha. Not a coffee drinker! :)

my time in FRONT of the camera

I have been hard at work promoting and re-vamping my photography, Bailey K Photography, and my design business, Let Birds Fly Design. Because of this, I wanted new, fresh headshots to incorporate throughout both of my websites.

Turns out Mark (the hubs) needed some taken of him as well for his business, Klentzman Entertainment. I'll show you his later. :)

The hubs was the photographer for this little photoshoot. Not too long ago, I taught him how to take photos with the camera on manual, and he's doing such a good job at it! Proud of him.

This was my first time being in a photoshoot since my bridal portraits, almost 4 years ago. I'm NEVER in front of the camera. I think I might make it a regular thing. One reason would be to have updated photos of me all the time. But the biggest reason is so I can be constantly reminded of how it feels to be the object of a photoshoot.

It's hard to be in a photoshoot by yourself. Especially if the photographer isn't constantly talking to you and encouraging you. Which my husband did NOT know how to do. :) I had no idea if my poses were okay, or if my facial expressions looked alright or not. Hehe.

Now I'm back to being behind the camera. Hopefully you'll see me sooner rather than later. :)

puerto rico - feeding the pigeons

While walking around Old San Juan, we found this little corner where there were TONS of pigeons. Someone was selling birdfeed, so of course we jumped on it! These birds were CRAZY for that birdseed!

Both of my nieces, age 4 and 15, had so much fun feeding them. But so did everyone else. :)

Elise (4 year old niece) was so excited and a teeny bit afraid at the same time. So cute.

This was the best. This one pigeon was going to town on Carley (the sis). It started pecking way too hard, and was hurting her. I LOVE the faces she was making. SO funny!! She's the best.

The novelty of feeding birds, especially in other cultures, is so intriguing to me. I love how excited the kids (and adults) are about all of the birds, which can bond people across all cultures. So great!
